  • 3 pieces ripe avocados Choose ripe avocados for the best creamy texture.
  • 1 unit Juice of 1 lime
  • 1/4 cup chopped cilantro
  • 1/4 cup diced red onion
  • 1/3 cup shredded cheddar cheese or Mexican blend cheese Experiment with different cheeses for varied flavors.
  • 1/4 cup crumbled queso fresco
  • 1 tablespoon minced jalapeño Adjust to taste; add more for extra heat.

Preparation

  • Cut the avocados in half lengthwise, remove the seeds, and scoop out the flesh into a medium bowl.
  • Add the lime juice, chopped cilantro, diced red onion, shredded cheese, crumbled queso fresco, and minced jalapeño to the bowl.
  • Sprinkle in kosher salt and freshly cracked black pepper to taste.
  • Use a fork to roughly mash the mixture until you achieve your preferred guacamole consistency.
  • Taste and adjust seasoning as needed.

Serving

  • Serve the cheesy guacamole fresh with tortilla chips for dipping.

Notes

Store in an airtight container in the fridge and press plastic wrap directly onto the surface to minimize oxidation. Best enjoyed fresh, can be frozen for up to three months. For variations, consider adding diced tomatoes with green chilies or using fresh herbs.
