  • 1 can sweet corn or 2 cups fresh corn
  • 1 cup cheddar cheese, shredded Use freshly grated for a richer flavor.
  • 1/2 cup mayonnaise
  • 2 cloves garlic, minced
  • Salt, to taste
  • Black pepper, to taste
  • 2 stalks green onions, chopped

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the sweet corn, mayonnaise, minced garlic, salt, and black pepper. Mix thoroughly.
  3. Stir in the shredded cheddar cheese and chopped green onions into the corn mixture.
  4. Pour the mixture into a greased oven-safe baking dish.
Cooking
  1. Bake for about 20 minutes until bubbly and golden brown.
  2. Broil for an additional 2-3 minutes to achieve a charred top.
  3. Remove from the oven and garnish before serving warm.

Notes

To store leftovers, place them in an airtight container in the fridge for up to 3 days. Reheat in the oven or microwave until warm. For freezing, store in a freezer-safe container for up to 2 months, and thaw before reheating. For variations, add diced jalapeños for spice or mix in sautéed vegetables for a vegetarian option.
