  • 2 lbs frozen hash brown potatoes
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese Can use a combination of cheddar and mozzarella for extra flavor.
  • 1/2 cup melted butter
  • 1 can cream of chicken soup Use gluten-free variety to make it gluten-free.
  • 1/2 cup chopped onion
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup crushed cornflakes (optional, for topping) Adds extra crunch.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the frozen hash brown potatoes, sour cream, cheddar cheese, melted butter, cream of chicken soup, chopped onion, garlic powder, salt, and pepper.
  • Mix until well combined.
  • Transfer the mixture to a greased 9x13 inch baking dish.
  • If you like, sprinkle the crushed cornflakes on top for extra crunch.
  • Bake for 45-50 minutes or until the top is golden brown and bubbly.
  • Let cool slightly before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. To reheat, warm them in the oven at 350°F until heated through. You can also freeze these cheesy potatoes for up to 3 months.
