  • 3 pounds ground beef
  • 1 box small pasta shells
  • 1 block Velveeta cheese
  • 1 handful sharp cheddar cheese
  • 2 packs taco seasoning
  • 1 can original Rotel for added flavor and moisture

Preparation

  • In a large pot, cook the ground beef over medium heat until browned. Drain excess fat.

Cooking

  • Add the taco seasoning to the beef along with the can of Rotel, and mix well.
  • Boil pasta shells according to package instructions, then drain.
  • Combine the cooked pasta with the beef mixture.
  • Add Velveeta cheese and stir until melted and well combined.
  • Top with sharp cheddar cheese and serve warm.

Notes

Pairs well with a fresh garden salad and garlic bread. Consider adding sour cream or fresh cilantro for enhanced flavor. To store, refrigerate in an airtight container for 3 to 4 days or freeze for up to 2 months.
