  • 3 pounds ground beef
  • 1 box small pasta shells
  • 1 block Velveeta cheese
  • 1 handful sharp cheddar cheese
  • 2 packs taco seasoning
  • 1 can original Rotel

Cooking

  • In a large skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  • Add the taco seasoning to the beef and mix according to package instructions.
  • In a separate pot, cook the small pasta shells according to package directions until al dente.
  • Drain the pasta and add it to the skillet with the seasoned beef.
  • Stir in the Velveeta cheese and original Rotel until everything is well combined and cheese is melted.
  • Add sharp cheddar cheese on top, allow it to melt slightly, then serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 5 days. Reheat in the microwave or stovetop. For freezing, let cool completely and store in a freezer-safe container for up to three months. Add variety with different cheeses or extra veggies.
