Ingredients
  

Meat and Cheeses
  • 3 pounds ground beef
  • 1 block Velveeta cheese Cut into cubes
  • 1 handful sharp cheddar cheese For topping
Pasta and Seasoning
  • 1 box small pasta shells
  • 2 packs taco seasoning
  • 1 can original Rotel

Method
 

Cooking the Beef
  1. In a large pot, cook the ground beef over medium heat until browned. Drain excess fat.
  2. Add taco seasoning and Rotel to the beef, stir to combine.
Cooking the Pasta
  1. Cook pasta shells according to package instructions.
  2. Once pasta is cooked, drain and add it to the beef mixture.
Combining Ingredients
  1. Cut Velveeta cheese into cubes and add it along with the sharp cheddar.
  2. Stir until cheeses are melted and everything is well combined.
Serving
  1. Serve warm and enjoy!

Notes

For a complete meal, serve with crispy tortilla chips and salsa or a fresh green salad with lime vinaigrette. Store leftovers in an airtight container in the fridge for up to three days.
