Ingredients
  

For the filling
  • 1 pound ground beef
  • 1/2 cup cooked macaroni
  • 1/2 cup shredded cheddar cheese Can substitute with pepper jack for some extra heat.
  • 1/4 cup cooked and crumbled bacon
  • 1/4 cup diced onion
  • Salt and pepper to taste
For the coating
  • 4 large onion rings Generous size is preferred.
  • 1/2 cup flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Oil for frying Heat to 350°F (175°C).

Method
 

Preparation
  1. In a large mixing bowl, combine ground beef, cooked macaroni, shredded cheddar cheese, crumbled bacon, diced onion, salt, and pepper. Stir until well mixed.
  2. Divide the mixture into four equal portions and shape each into a patty.
  3. Place each patty in the center of an onion ring, pressing down gently to secure.
Coating
  1. Dredge each stuffed onion ring in flour, dip into beaten eggs, and coat with breadcrumbs.
  2. Heat oil in a deep fryer or large skillet to 350°F (175°C).
Cooking
  1. Carefully place the stuffed onion rings into the hot oil, frying until golden brown, about 4-5 minutes per side.
  2. Remove the cooked onion rings from the oil and let drain on paper towels.
Serving
  1. Serve hot with your favorite dipping sauce.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, wrap and freeze. Reheat in an oven at 350°F (175°C) for 10-15 minutes.
