  • 1 pound ground beef Choose beef with some fat content for added flavor; an 80/20 blend works well.
  • 4 medium russet potatoes, peeled and diced For a golden crust, let the potatoes sit in the skillet without stirring for a few minutes.
  • 1 cup shredded cheddar cheese You can use other cheeses like Monterey Jack or mozzarella for flavor variety.
  • ½ cup diced onion
  • 1 teaspoon garlic powder Always taste and adjust seasonings.
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • Salt, to taste
  • 2 tablespoons olive oil For cooking the potatoes.
  • ¼ cup milk (optional) Use for creaminess, otherwise it's delicious without it.
  • Chopped parsley or green onions for garnish

Preparation

  • Heat olive oil in a large skillet over medium heat.
  • Cook diced potatoes for 10–12 minutes until golden and tender. Transfer to a plate.
  • In the same skillet, cook ground beef and onion until beef is browned and onion is soft, about 8 minutes. Drain excess fat.
  • Season with garlic powder, smoked paprika, black pepper, and salt. Stir to combine.
  • Return potatoes to the skillet and mix. Add milk if desired for creaminess.
  • Sprinkle cheddar cheese over the top. Cover and cook for 2–3 minutes until melted.
  • Garnish with parsley or green onions before serving.

Notes

Serve with steamed veggies or a light salad to balance the richness. A drizzle of hot sauce adds a nice kick. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
