Ingredients
  

For the Taco Shells

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1/2 teaspoon baking powder
  • pinch salt
  • 1/4 cup unsalted butter, softened
  • 1/4 cup milk
  • to taste Oil for frying
  • 1/4 cup sugar + 1 teaspoon cinnamon (for dusting)

For the Cheesecake Filling

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy whipping cream, whipped

For the Strawberry Topping

  • 1 cup fresh strawberries, chopped
  • 1/4 cup sugar
  • 1 tablespoon lemon juice

Instructions
 

Make the Taco Shells

  • In a bowl, mix the flour, sugar, baking powder, and salt.
  • Add the butter and mix until crumbly.
  • Gradually add the milk and mix until a dough forms.
  • Roll the dough into a ball, cover, and let it rest for 10 minutes.
  • Roll the dough out on a floured surface and cut small circles (4-5 inches) using a round cutter or the rim of a glass.
  • Heat oil in a pan over medium heat.
  • Fry each circle for 1-2 minutes, shaping them into taco shells with tongs as they cook.
  • Place on paper towels to drain, and while still warm, dust the taco shells with cinnamon sugar.

Prepare the Cheesecake Filling

  • In a mixing bowl, beat the cream cheese and powdered sugar until smooth.
  • Add the vanilla extract and fold in the whipped cream.
  • Chill until ready to use.

Make the Strawberry Topping

  • In a small saucepan, combine the strawberries, sugar, and lemon juice.
  • Cook over medium heat until the strawberries release their juices and the mixture thickens slightly.
  • Allow it to cool completely.

Assemble the Tacos

  • Fill each taco shell with the cheesecake filling using a piping bag or spoon.
  • Top with the strawberry topping.

Serve and Enjoy

  • Arrange the cheesecake tacos on a platter and serve immediately.

Notes

For best taste, serve fresh. Store taco shells and cheesecake filling separately in the fridge. Assemble just before serving.
