Ingredients
  

For the cheesecake filling

  • 8 oz cream cheese, softened Ensure cream cheese is fully softened for smoother mixing.
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup whipped cream Gently fold in to avoid over-mixing.

For the crust

  • 1 cup chocolate crumbs For the crust; can use graham cracker crumbs for variation.

Toppings

  • Assorted toppings (chocolate, fruit, etc.) Customize with your favorite toppings.

Preparation

  • In a mixing bowl, beat the softened cream cheese until smooth.
  • Add the powdered sugar and vanilla extract, and mix until combined.
  • Gently fold in the whipped cream until smooth.
  • Press the chocolate crumbs into the bottom of bite-sized molds.
  • Spoon the cheesecake mixture on top of the crust.
  • Chill in the refrigerator for at least 2 hours before serving.
  • Top with assorted toppings as desired before serving.

Notes

Store any leftover Cheesecake Bites in an airtight container in the refrigerator for up to 3 days. They can be prepared a day or two before your event.
