  • 1 lb ground beef Can substitute with ground turkey or chicken for a lighter option.
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth Can substitute with vegetable broth for a lighter flavor.
  • 3 medium potatoes, diced
  • 1 cup shredded carrots
  • 1 cup corn
  • 1 tsp Worcestershire sauce
  • 1 cup heavy cream Reheat slowly to prevent curdling.
  • 2 cups shredded cheddar cheese You can enhance the flavor with a mix of cheeses.
  • Salt and pepper to taste
  • Chopped green onions for garnish

Preparation

  • In a large pot, brown the ground beef over medium heat and drain excess fat.
  • Add the chopped onion and minced garlic, and sauté until onions are fragrant and translucent.

Cooking

  • Stir in the beef broth, diced potatoes, carrots, corn, and Worcestershire sauce.
  • Bring to a boil, then reduce to a simmer and cook until the potatoes are tender.
  • Stir in the heavy cream and cheese until melted.
  • Season with salt and pepper to taste.

Serving

  • Serve hot and garnish with chopped green onions.

Notes

Serve with crusty bread or a warm baguette for dipping. A fresh side salad with a light vinaigrette complements the richness of the soup. You can also drizzle extra Worcestershire sauce or hot sauce for more flavor.
