  • 1 lb shrimp, peeled and deveined Use fresh shrimp for the best flavor and texture.
  • 1 package (9 oz) cheese tortellini
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 3 cloves garlic, minced For added heat, consider adding red pepper flakes while sautéing.

Preparation

  • In a large pot, bring salted water to a boil and cook the cheese tortellini according to package instructions.
  • In a skillet, heat olive oil over medium heat. Add shrimp and cook until pink, about 2-3 minutes per side. Remove shrimp and set aside.
  • In the same skillet, melt butter and add garlic, sautéing for about a minute.
  • Add the cooked tortellini and shrimp to the skillet, tossing to combine.

Serving

  • Serve hot and enjoy! For a complete meal, consider serving with a light side salad dressed with lemon vinaigrette and garlic bread.

Notes

If storing leftovers, keep in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet with a splash of milk to prevent the sauce from thickening too much. This dish can also be frozen for about a month.
