  • 1 pound top sirloin sliced into thin pieces Use fresh top sirloin for best flavor.
  • 1/2 cup yellow onion, chopped
  • 3 pieces bell peppers, cut into strips Use a mix of colors for presentation.
  • 2 tablespoons olive oil For sautéing the vegetables.
  • 2 cups chicken broth Low sodium recommended.
  • 8 ounces tomato sauce
  • 2 cups Minute Rice Follow package instructions for cooking.
  • 1 packet fajita seasoning Adjust amount based on spice preference.
  • as much as desired cups Velveeta cheese dip or any melty cheese dip Use more for extra cheesy flavor!

Preparation

  • Heat olive oil in a skillet over medium-high heat.
  • Add the chopped onion and bell pepper strips, stirring until they begin to soften.

Cooking

  • Add the steak strips to the pan and sprinkle the fajita seasoning evenly.
  • Cook, stirring, until the steak is browned to your liking.
  • Stir in the Minute Rice, tomato sauce, and chicken broth, combining thoroughly.
  • Allow to simmer on medium heat, following instructions on the rice package.
  • Add a splash of liquid if it appears too dry while cooking.
  • Once the rice is fluffy and the mixture isn’t too watery, spoon warm cheese dip over the dish.
  • Let the cheese melt into the skillet and serve hot.

Notes

This dish pairs well with fresh guacamole or light salad. For longer leftovers, store in an airtight container in the fridge for 3-4 days, or freeze for up to 3 months.
