  • 4 pieces boneless, skinless chicken breasts
  • 1/2 cup ranch dressing can use low-fat for a healthier option
  • 1 cup shredded cheddar cheese substitute with other cheese varieties if desired
  • 8 slices cooked bacon, crumbled
  • 1 tablespoon olive oil
  • to taste salt and pepper

Method
 

Preparation
  1. Preheat your oven to 375°F.
  2. Take each chicken breast and place it between two sheets of plastic wrap. Pound them to an even thickness for uniform cooking.
  3. Season both sides of the chicken breasts with salt and pepper.
  4. Spread a generous amount of ranch dressing over each breast.
  5. Sprinkle shredded cheddar cheese and crumbled bacon on top evenly.
  6. Roll each chicken breast tightly and secure with toothpicks.
Cooking
  1. In a skillet, heat olive oil over medium-high heat. Add the chicken rolls and brown them on all sides, which should take about 2-3 minutes per side.
  2. Transfer your neatly browned chicken rolls to a baking dish. Bake in the oven for about 25-30 minutes or until the chicken is cooked through and the cheese is beautifully melted.
  3. Serve hot, and enjoy!

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to maintain cheese texture.
