Ingredients
  

For the Carrot Cake

  • 3/4 cup all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 3 large eggs
  • 1/2 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons vegetable oil
  • 2 cups carrots, finely shredded

For the Cream Cheese Filling

  • 6 ounces cream cheese, softened
  • 4 tablespoons salted sweet cream butter
  • 1 3/4 cups powdered sugar
  • 1 1/2 teaspoons pure vanilla extract

For the Glaze

  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line a 15×10 inch jelly roll pan with parchment paper.
  • In a bowl, combine the flour, cinnamon, baking powder, salt, ginger, and nutmeg.
  • In another bowl, mix the eggs, granulated sugar, and vanilla extract until fluffy.
  • Gradually add the dry ingredients to the egg mixture, then mix in the vegetable oil and finely shredded carrots.
  • Spread the batter evenly in the prepared pan.
  • Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.

Cream Cheese Filling

  • While the cake is baking, prepare the cream cheese filling by mixing the softened cream cheese, butter, powdered sugar, and vanilla extract until smooth.

Assembly

  • Once baked, immediately invert the cake onto a clean linen tea towel dusted with powdered sugar.
  • Roll the cake with the towel and let it cool completely.
  • Once cooled, unroll the cake, spread the cream cheese filling evenly, and carefully roll it back up without the towel.

Glaze

  • Mix the powdered sugar and milk until you reach your desired consistency. Drizzle this over the cake roll before serving.

Notes

Make sure your cream cheese is softened for easy mixing. Don’t skip rolling the cake while it’s warm; it helps to keep its shape. You can add nuts or raisins to the carrot mixture if you like extra texture.
