  • 2 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 1 teaspoon baking soda

  • 4 large eggs
  • 1 cup sugar
  • 0.5 cup vegetable oil
  • 0.5 cup packed brown sugar
  • 2 teaspoons vanilla extract
  • 2 cups finely grated carrots
  • 1 cup chopped walnuts or pecans optional

Honey glaze ingredients

  • 0.5 cup honey
  • 0.25 cup butter
  • 0.25 cup heavy cream
  • 1 teaspoon vanilla extract
  • 0.5 cup powdered sugar to thicken honey glaze

Cream cheese glaze ingredients

  • 4 oz cream cheese, softened
  • 0.25 cup powdered sugar
  • 2 tablespoons milk
  • 0.5 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a bundt cake pan or a 9x13-inch baking dish.
  • In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
  • In a large bowl, beat eggs, sugar, vegetable oil, brown sugar, and vanilla extract until smooth.
  • Gradually add the dry ingredients and mix until well combined.
  • Stir in grated carrots and optional nuts.

Baking

  • Pour the batter into the prepared pan.
  • Bake for 30-40 minutes until a toothpick comes out clean.
  • Cool in the pan for 10 minutes, then remove and cool completely on a wire rack.

Glazing

  • For the honey glaze, combine honey, butter, and heavy cream in a saucepan over medium heat until melted and smooth. Stir in vanilla extract. Add powdered sugar for thickness if desired.
  • For the cream cheese glaze, beat cream cheese with powdered sugar, milk, and vanilla until smooth.
  • Once cooled, drizzle the honey glaze over the cake, then drizzle the cream cheese glaze on top.
  • Top with chopped nuts if desired.

Notes

Make sure to grate the carrots finely for even mixing. Use room temperature eggs for better mixing. You can adjust the spices to match your taste. If you like, add raisins or coconut to the batter for extra flavor.
