  • 2 large sweet potatoes, peeled and cubed
  • 2 tbsp olive oil
  • 2 tbsp maple syrup
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped walnuts, toasted
  • 1/2 tsp ground cinnamon
  • Salt & pepper, to taste
  • Optional: fresh thyme or rosemary for garnish

Preparation

  • Preheat the oven to 400°F (200°C).
  • Toss the sweet potatoes with olive oil, maple syrup, cinnamon, salt, and pepper until well coated.
  • Spread them evenly on a baking sheet and roast for 25–30 minutes, flipping halfway through, until they are golden and caramelized.
  • Once done, transfer the sweet potatoes to a serving dish.
  • Top them with crumbled feta, toasted walnuts, and herbs if desired.
  • Serve warm as a comforting side or a light vegetarian main.

Notes

These sweet potatoes pair beautifully with a fresh arugula salad or alongside grilled chicken or fish. Drizzling a balsamic reduction over the dish elevates the flavors.
