Preparation
  1. Preheat your oven to 425°F and line a large baking sheet with parchment.
  2. Cut sweet potatoes into even 1-inch cubes and toss them in a large bowl with olive oil, salt, pepper, cinnamon, and smoked paprika.
Make the Maple Glaze
  1. In a small bowl, mix together maple syrup with a tiny pinch of salt and cayenne if desired.
Roast and Finish
  1. Spread the sweet potatoes on the prepared baking sheet, ensuring they're not crowded.
  2. Roast for 15 minutes, then stir and pour the maple mixture over the potatoes, tossing to coat.
  3. Continue roasting for another 10 to 15 minutes until the edges are golden and the centers are tender.
  4. Sprinkle walnuts over the hot potatoes and then scatter feta on top.
