  • 1 medium butternut squash, peeled and cubed
  • 2 tbsp olive oil

  • 1/4 cup blue cheese, crumbled
  • 1/4 cup cranberry sauce
  • 1 tbsp maple syrup
  • as needed Fresh thyme or parsley, for garnish

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, toss the butternut squash cubes with olive oil, salt, and pepper until well coated.
  • Spread the seasoned squash in a single layer on the baking sheet.

Cooking

  • Roast for 25–30 minutes, turning halfway through, until the squash is golden and tender.
  • While the squash is roasting, warm the cranberry sauce and maple syrup together in a small saucepan over low heat, stirring until smooth to create a delicious glaze.
  • After the squash is done, transfer it to a serving platter.
  • Drizzle it generously with the cranberry-maple glaze and sprinkle with crumbled blue cheese.
  • Garnish with fresh thyme or parsley and serve warm.

Notes

For even roasting, cut the butternut squash into uniform cubes. Experiment with different cheese varieties like goat cheese or feta. Add chili flakes for a spicy kick. You can make the dish ahead of time and reheat before serving.
