Preparation

  • In a medium saucepan, place the sugar over medium heat. Stir gently with a wooden spoon or silicone spatula.
  • As the sugar begins to melt, continue stirring to help it melt evenly.
  • Once the sugar reaches a deep amber color, remove the pan from the heat.
  • Quickly add in the butter, stirring until completely melted.
  • Gradually add the heavy cream while stirring, taking your time as the mixture will bubble again.
  • Stir in vanilla extract and salt, if using. Allow the sauce to cool for several minutes; it will thicken as it cools.

Notes

Use high-quality butter for enhanced flavor. Always measure ingredients carefully and be cautious of hot sugar.
