Ingredients
  

For the empanadas

  • 30 oz refrigerated pie crusts
  • 21 oz apple pie filling
  • 11 oz caramels
  • 4 TB unsalted butter
  • 2 TB sugar
  • 2 tsp cinnamon

Preparation

  • Preheat the oven to 375°F (190°C).
  • Roll out the pie crusts and cut them into circles.
  • Place a spoonful of apple pie filling in the center of each circle.
  • Melt the caramels with the unsalted butter, then drizzle over the apple filling.
  • Fold the pie crust over to form a half-moon shape and seal the edges.
  • Sprinkle with sugar and cinnamon mixture.
  • Bake in the preheated oven for 25-30 minutes or until golden brown.
  • Let cool slightly before serving.

Notes

Serve these empanadas warm or at room temperature, and consider adding a scoop of vanilla ice cream on the side. Store leftovers in an airtight container at room temperature for up to two days or refrigerate for up to a week. Reheat in the oven before serving for the best taste. You can also freeze them before baking and add extra minutes to the baking time when ready.
