Ingredients
  

Pastry
  • 1 sheet puff pastry (thawed if frozen)
  • 1 egg (for egg wash)
  • Flour for dusting
Filling
  • 2 pieces apples (firm, like Honeycrisp or Pink Lady), thinly sliced
  • 120 g brie cheese, sliced into small wedges
  • 1 tbsp lemon juice
  • 2 tbsp brown sugar
  • 1 pinch cinnamon

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry on a floured surface and cut it into tree shapes or small circles.
  3. Place the pastry shapes on a baking tray lined with parchment paper.
  4. Lightly beat the egg and brush it over the pastry for a golden finish.
  5. In a bowl, mix the thinly sliced apples with lemon juice, brown sugar, and cinnamon.
Assembly
  1. Layer the apple slices and brie cheese on top of the pastry shapes.
  2. Drizzle some caramel over the top if desired.
Baking
  1. Bake in the preheated oven for 15-20 minutes or until the pastry is golden and puffed.
  2. Remove from the oven and let cool slightly before serving.

Notes

Serve on a festive platter with a light arugula salad and cranberry sauce. Store leftovers in an airtight container in the refrigerator for up to three days. To reheat, bake at 350°F (175°C) until warmed through. Tartlets can be made in advance and frozen before baking.
