  • 1 cup arugula
  • 1/4 cup pesto sauce Experiment with flavored options.

Preparation

  • Slice the ciabatta loaf in half horizontally and spread pesto on both sides.
  • Layer arugula on the bottom half, followed by tomato slices, mozzarella, and basil leaves.
  • Top with the other half of the ciabatta and press lightly.
  • Optionally, grill or press the sandwich for 2–3 minutes per side until crisp.
  • Drizzle with olive oil, slice, and serve immediately.

Notes

Pairs beautifully with crispy potato chips or a light side salad. Can store leftovers in an airtight container in the fridge for up to two days. Reheat in a skillet over medium heat.
