Ingredients
  

Eclair Dough

  • 1 cup water
  • 1/2 cup butter Unsalted butter is recommended.
  • 1 cup all-purpose flour
  • 4 large eggs

Filling and Topping

  • 1 cup heavy cream
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • to taste optional Chocolate glaze Drizzle over filled eclairs before serving.

Instructions
 

Preparation of Dough

  • In a medium saucepan, combine water and butter. Bring to a boil over medium heat.
  • Stir in the flour until the mixture forms a ball.
  • Remove from heat and let it cool for 5 minutes.
  • Beat in the eggs one at a time until the mixture is smooth and glossy.
  • Pipe the dough into long strips onto parchment paper.
  • Roast over the campfire until golden brown, approximately 10-15 minutes.

Filling

  • For the filling, whip the heavy cream with sugar and vanilla until stiff peaks form.
  • Once the eclairs are cool, cut them open and fill with whipped cream.
  • Drizzle with chocolate glaze if desired.

Notes

Store leftover eclairs in an airtight container in the refrigerator for up to two days. Best enjoyed fresh.
