  • 1 pound lean ground chicken
  • 1/2 cup mayonnaise
  • 1/2 cup red onion, diced
  • 10.5 ounces condensed cream of chicken soup
  • 15 ounces canned corn, drained
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup shredded mozzarella and cheddar cheese blend
  • 4 large hamburger buns

Preparation

  • In a big skillet, cook the ground chicken over medium heat, breaking it up as it cooks until there’s no pink left.
  • Add the corn, diced red onion, cream of chicken soup, Cajun seasoning, onion powder, salt, and black pepper to the skillet.
  • Mix everything well to coat, and let it bubble gently for about 5-7 minutes, stirring occasionally, until thick.
  • Remove from heat and gently stir in mayonnaise until smooth and creamy.
  • Optionally, toast the hamburger buns until golden.
  • Spoon the hot chicken mixture onto the bottom buns and sprinkle cheese over the top.
  • Place the top buns on and serve while warm.

Notes

Serve with crispy sweet potato fries, a fresh garden salad, or zesty coleslaw. For variations, add jalapeños for heat or use Greek yogurt for creaminess.
