Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine softened butter, brown sugar, and granulated sugar using an electric mixer. Beat until light and fluffy, about 2-3 minutes.
  • Add eggs one at a time, mixing well after each addition. Blend in the vanilla extract.
  • In another bowl, whisk together the flour, baking soda, and salt. Gradually mix into the wet mixture, being careful not to overmix.
  • Gently fold in the toffee bits until evenly distributed.
  • Drop generous amounts of dough onto a parchment-lined baking sheet, leaving space for spreading.
  • Bake for 10-12 minutes or until edges are golden brown and centers look slightly soft.
  • Cool on the tray for 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra flavor, sprinkle a pinch of sea salt on top before baking. Store in an airtight container for freshness.
