  • 3 pieces eggs, room temperature Ensure they are at room temperature.
  • 1 cup buttermilk, room temperature To mimic buttermilk, mix regular milk with a teaspoon of vinegar or lemon juice.
  • 1 teaspoon vanilla extract
  • 1 piece 8-inch pie shell Store-bought or homemade.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and sugar until the mixture is light and fluffy.
  3. Add the flour and salt to the butter-sugar blend, mixing until well-combined.
  4. Beat in each egg one at a time, ensuring thorough mixing after each addition.
  5. Stir in the buttermilk and vanilla extract until you achieve a velvety consistency.
  6. Carefully pour the finished filling into your prepared pie shell.
  7. Bake in the preheated oven for 40-45 minutes, or until the filling has set and the top is lightly golden.
  8. Allow the pie to cool before slicing and enjoying.

Notes

Serve with a dollop of freshly whipped cream, alongside a scoop of vanilla ice cream, or with fresh berries for a refreshing contrast. For storage, refrigerate covered for up to 3 days or freeze for up to 2 months.
