  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder

Preparation
  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream the softened butter and sugar together until light and fluffy.
  3. Beat in the egg and vanilla extract until fully incorporated.
  4. In a separate bowl, whisk together the flour, salt, and baking powder.
  5. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  6. Roll the dough into 1-inch balls and place them spaced apart on the prepared baking sheet. Flatten each ball slightly with the palm of your hand or a fork.
  7. Bake for 12-15 minutes, or until the edges are golden brown. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Enjoy Butter Cookies with tea or coffee, on dessert platters, or with a drizzle of chocolate sauce. Store in an airtight container at room temperature, or freeze for longer storage. Chill dough for thicker cookies, and try rolling in powdered sugar or adding citrus zest for variations.
