  • 2 pints cherry tomatoes (20-24 ounces) Choose ripe cherry tomatoes for a sweeter sauce.
  • 6 cloves garlic, sliced
  • ¼ cup extra virgin olive oil Use high-quality extra virgin olive oil for the best flavor.
  • ¼ tsp crushed red pepper flakes Adjust to taste.
  • ½ tsp salt Adjust to taste.
  • ¼ tsp black pepper Adjust to taste.
  • 1 cup basil, chopped

Preparation

  • Slice the garlic cloves and chop the fresh basil. Set aside.

Cooking

  • Heat a large pan or skillet over medium heat. Add the extra-virgin olive oil, and once it’s hot, add the sliced garlic. Heat for about 30 seconds until fragrant.
  • Add the cherry tomatoes, crushed red pepper flakes, and salt and pepper to the pan. Stir occasionally for 3-5 minutes until tomatoes start to blister.
  • Use a potato masher or the back of a wooden spoon to mash the tomato skins until they pop and release their juices.
  • Lower the heat to a simmer and let the sauce cook for another 10-15 minutes, stirring frequently until it thickens.
  • Turn off the heat and stir in the chopped basil.

Notes

If you like a smoother sauce, use an immersion blender or food processor to puree it to your desired consistency. Store in an airtight container in the refrigerator for up to 5 days, or freeze for up to 3 months.
