Filling Ingredients
  • 2 cups cooked chicken, shredded Rotisserie chicken is a great shortcut.
  • 1 cup cream cheese, softened
  • 1/2 cup shredded cheddar or mozzarella cheese Your choice.
  • 1/2 cup buffalo sauce Adjust for spice preference.
  • 1/2 cup blue cheese dressing Or ranch, if preferred.
For Wrapping and Frying
  • 1 pack egg roll wrappers
  • oil as needed for frying Vegetable or canola oil works best.

Method
 

Preparation
  1. In a mixing bowl, combine shredded chicken, cream cheese, cheddar or mozzarella, buffalo sauce, and blue cheese dressing. Ensure everything is well blended.
  2. Take an egg roll wrapper and place a spoonful of the mixture in the center.
  3. Fold the sides of the wrapper in, then roll tightly to seal your egg roll.
Cooking
  1. In a frying pan, heat oil over medium heat.
  2. Fry the egg rolls until they are golden brown and crispy on all sides.
  3. Once cooked, drain on paper towels and serve with extra buffalo sauce or blue cheese dressing for dipping.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze them before frying. To reheat, bake in an oven at 350°F until warmed through and crispy.
