Cookie Ingredients
  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
Peanut Butter Filling
  • 1 cup creamy peanut butter Natural peanut butter can be used, but may affect consistency.
  • 2 cups powdered sugar
Chocolate Drizzle
  • 1 cup chocolate chips Can be swapped for dark or white chocolate.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Cream the butter and granulated sugar together in a large bowl until smooth and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. Combine the flour, cocoa powder, baking powder, and salt in a separate bowl. Gradually mix this dry mixture into the creamed mixture until fully incorporated.
  5. Scoop tablespoonfuls of cookie dough and drop them onto ungreased cookie sheets.
  6. Bake for 10-12 minutes. Let them cool on the sheets for a few minutes before transferring to wire racks.
Filling and Drizzle
  1. Prepare the filling by mixing the creamy peanut butter and powdered sugar until smooth.
  2. Spread the peanut butter filling on half of the cookies, then top them with the remaining cookies.
  3. Melt the chocolate chips and drizzle or dip the filled cookies into the melted chocolate. Allow the chocolate to set before serving.

Notes

To store, place cookies in an airtight container at room temperature for up to a week, or freeze for longer storage. Allow cookies to cool completely before freezing.
