  • 2 pieces boneless, skinless chicken breasts, grilled and sliced Grilling adds a smoky flavor.
  • 1 pound penne pasta Any pasta can be used interchangeably.
  • 2 cups cherry tomatoes, halved Use fresh for better flavor.
  • 1/4 cup red onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup fresh basil, chopped Fresh is recommended over dried.
  • 1/4 cup balsamic vinegar Adds tanginess.
  • 1/3 cup olive oil For sautéing.
  • 1/2 cup grated Parmesan cheese For topping.
  • Salt and pepper to taste

Method
 

Cooking Pasta
  1. Cook the penne pasta according to package instructions. Drain and set aside.
Sautéing Vegetables
  1. In a skillet, heat olive oil over medium heat and sauté the garlic and red onion until fragrant.
  2. Add the cherry tomatoes and cook until they start to soften.
Combining Ingredients
  1. In a large bowl, combine the cooked pasta, sautéed mixture, grilled chicken, balsamic vinegar, and fresh basil. Toss to combine.
  2. Season with salt and pepper to taste.
Serving
  1. Serve topped with grated Parmesan cheese.

Notes

For a complete meal, serve with a side of garlic bread and a fresh salad. Leftovers can be stored in the fridge for up to three days.
