Ingredients
  

Wet Ingredients

  • 2 bananas, mashed Make sure your bananas are ripe for maximum sweetness.
  • 1/4 cup cashew butter Substitute peanut butter or almond butter if preferred.
  • 1 1/4 cup unsweetened almond milk Feel free to use any non-dairy milk of your choice.
  • 1/4 cup pure maple syrup
  • 2 tsp vanilla extract

Dry Ingredients

  • 2 cups rolled oats
  • 1/4 cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup chocolate chips Optional: Top with more chocolate chips before baking.

Instructions
 

Preparation

  • Preheat the oven to 400 degrees.
  • In a large mixing bowl, add the wet ingredients: mashed bananas, cashew butter, almond milk, pure maple syrup, and vanilla extract. Combine.
  • In another bowl, add the dry ingredients: oats, cocoa powder, baking powder, and salt. Combine.
  • Stir in the chocolate chips.
  • Transfer the oatmeal mixture to a prepared baking dish and spread evenly.

Baking

  • Bake for 25 minutes.
  • Remove from the oven, let cool, and cut into squares.
  • Serve and enjoy!

Notes

Store leftover Brownie Baked Oatmeal in the refrigerator for up to a week. To reheat, microwave for a minute or two. For freezing, cut into squares, place in an airtight container, and keep in the freezer for up to three months.
