  • 1 cup unsalted butter, softened Ensure butter is at room temperature.
  • 1 cup brown sugar, packed
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon

Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  6. Roll the dough into 1-inch balls and place them 2 inches apart on the prepared baking sheets.
  7. Flatten each cookie slightly with the palm of your hand or the bottom of a glass.
  8. Bake for 10-12 minutes or until the edges are set and just beginning to brown.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

These cookies are fantastic on their own or can be paired with vanilla ice cream. Store in an airtight container for up to a week or freeze for up to three months.
