Brookie Cookies combine the gooeyness of brownies with the chewiness of chocolate chip cookies, making them a delightful treat for any occasion.

Ingredients
  

For the cookie dough
  • 1 cup unsalted butter, softened Make sure the butter is at room temperature for best results.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour Can substitute with gluten-free blend if needed.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips You can experiment with different types of chocolate.
  • 1/2 cup cocoa powder
  • 1 cup walnuts (optional) Feel free to substitute with your favorite nuts or omit for nut-free version.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one by one, beating well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually mix this into the creamed mixture until just combined.
  5. Fold in the chocolate chips and walnuts if using.
  6. Drop spoonfuls of brownie batter onto a lined baking sheet.
  7. Spoon dollops of chocolate chip cookie dough on top of the brownie batter.
  8. Use a knife to swirl both doughs together slightly for a marbled effect.
  9. Bake for 12-15 minutes, or until the edges are set and the center looks slightly underbaked.
  10. Allow to cool for a few minutes on the sheet before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for about a week. For longer storage, freeze in a sealed bag and thaw at room temperature or warm in the oven.
