Ingredients
  

Dressing

  • 1 cup mayonnaise
  • 2 tablespoons honey Can be substituted with maple syrup for a vegan option.
  • 2 tablespoons apple cider vinegar
  • Salt and pepper To taste

Salad Ingredients

  • 4 cups fresh broccoli florets, cut into small pieces Use fresh for the best texture.
  • 1/2 cup dried cranberries Fresh cranberries can be used but are more tart.
  • 1 apple, unpeeled and diced
  • 1 cup walnuts, coarsely chopped Feel free to substitute with pecans or almonds.
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh parsley

Preparation

  • In a large mixing bowl, whisk together the mayonnaise, honey, apple cider vinegar, salt, and pepper until smooth.
  • Add the remaining ingredients: broccoli, cranberries, apple, walnuts, red onion, and parsley. Stir well to coat.

Notes

Let the salad sit for a few hours before serving to allow flavors to meld. Store in an airtight container in the fridge for up to four days.
