Ingredients
  

For the crust

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup melted butter

For the cheesecake filling

  • 8 oz cream cheese, softened Ensure cream cheese is well softened for a smoother texture.
  • 1/2 cup sugar
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 2 units eggs Add one at a time, mixing after each addition.
  • 3 oz semi-sweet chocolate, melted

For the blueberry swirl

  • 1 cup fresh or frozen blueberries Use fresh blueberries when in season.
  • 1/4 cup sugar
  • 1 tbsp lemon juice
  • 1 tsp cornstarch mixed with 2 tablespoons water Stir in cornstarch as per instructions.

Preparation

  • Preheat your oven to 325°F (163°C) and line the bottom of a 9-inch springform pan with parchment paper.
  • In a bowl, mix together the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press this mixture into the bottom of the springform pan to form the crust.
  • Bake for 10 minutes and let it cool.

Cheesecake Filling

  • Beat the cream cheese and 1/2 cup sugar in a bowl until smooth.
  • Add in the sour cream and vanilla extract, and mix well.
  • Add the eggs one at a time, mixing after each addition. Then, stir in the melted chocolate until smooth.
  • Pour the cheesecake mixture over the cooled crust.

Blueberry Swirl

  • Combine the blueberries, 1/4 cup sugar, and lemon juice in a small saucepan over medium heat. Cook for 5-7 minutes until the blueberries break down.
  • Stir in the cornstarch mixed with water, and simmer until thickened, about 2 minutes.
  • Let the sauce cool. Drop spoonfuls of blueberry sauce on top of the cheesecake filling and swirl with a knife for a marbled look.

Baking

  • Bake the cheesecake for 50-60 minutes until it is slightly wobbly in the center.
  • Turn off the oven and let the cheesecake cool inside with the door slightly ajar for 1 hour.
  • Remove from the oven, cool completely, and chill in the fridge for at least 4 hours or overnight.

Notes

Store any leftovers in the refrigerator and cover tightly. Best enjoyed chilled, can be topped with extra blueberry sauce or whipped cream.
