  • 1 cup fresh blueberries Fresh blueberries taste better, but frozen can be used if thawed.
  • 1/2 cup crumbled feta cheese Can be substituted with goat cheese if desired.
  • 1/4 cup chopped pecans Can be replaced with walnuts or almonds.

Dressing Ingredients

  • 1/4 cup balsamic vinegar
  • 1/2 cup olive oil
  • 1 tablespoon honey Optional for added sweetness.
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions
 

Prepare the Dressing

  • In a small bowl, whisk together the balsamic vinegar, olive oil, honey, Dijon mustard, salt, and pepper to make the dressing.

Combine Salad Ingredients

  • In a large salad bowl, combine the mixed greens, sliced peach, blueberries, crumbled feta cheese, and chopped pecans.

Assemble Salad

  • Drizzle the dressing over the salad and toss gently to combine all ingredients evenly.

Notes

Best served fresh. Pairs well with grilled chicken or fish. Store leftovers in an airtight container in the fridge and consume within a day. Keep the dressing separate until ready to serve.
