  • 1 sheet puff pastry or flatbread (250 g / 8.8 oz)
  • 1 teaspoon olive oil (5 ml)
Toppings
  • 1/2 cup fresh blueberries (75 g)
  • 100 g feta cheese, crumbled (3.5 oz)
  • 2 tablespoons hot honey (40 g)
  • 2 g fresh thyme leaves Optional, for garnish

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Lay the puff pastry or flatbread on a lined baking sheet.
  3. Drizzle a light layer of olive oil over the surface.
  4. Scatter the fresh blueberries evenly across the pastry, followed by the crumbled feta cheese.
Baking
  1. Bake in the preheated oven for 12-15 minutes, until the pastry is golden and the feta is starting to soften.
Finishing Touches
  1. Once out of the oven, generously drizzle the hot honey over the flatbread.
  2. If you like, finish with a sprinkle of fresh thyme leaves for that extra touch.
  3. Serve warm and enjoy!

Notes

For an extra layer of flavor, consider adding a sprinkle of lemon zest before baking. If you enjoy more spice, add crushed red pepper flakes to the hot honey. Experiment with different cheeses like goat cheese for a tangier flavor.
