  • 1 cup fresh blueberries Use fresh for best flavor.
  • 1/2 cup white chocolate chips Can be substituted with dark chocolate or nuts.
  • 1/2 cup unsalted butter, softened Should be soft but not melted.
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream the softened butter and sugar together until light and fluffy.
  • Add the egg and vanilla extract, mixing until well combined.
  • In another bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Gently fold in the blueberries and white chocolate chips.

Baking

  • Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week, or freeze them for about three months. For a refreshing twist, add a pinch of lemon zest to the dough.
