Preparation

  • Rinse the blueberries gently under cool water.
  • In a medium saucepan, place the blueberries and heat over medium-low heat, stirring occasionally for about 5-7 minutes until they break down into a purée.
  • Stir in the desired sweetener and fresh lemon juice, adjusting to taste.
  • Remove from heat and mix in the chia seeds, stirring thoroughly to distribute them evenly.
  • Let the jam cool to room temperature, then transfer to an airtight jar.
  • Store in the refrigerator for up to two weeks.

Notes

For a smoother consistency, blend the mixture before storing. You can also add cinnamon or vanilla extract for extra flavor.
