  • 1 piece flatbread or naan (about 120 g) A soft naan or classic flatbread works best.
  • 3 oz brie cheese, sliced You can experiment with other cheeses like goat or blue cheese.
  • 1/2 cup fresh blueberries Frozen blueberries can be used but will require adjusted cooking time.
  • 1 tbsp olive oil Brush the flatbread with this before topping.
  • 1 tbsp honey Maple syrup can be used for a vegan option.
  • 1/2 tsp fresh thyme leaves Can substitute with fresh rosemary or a mix of Italian herbs.
  • 1 pinch sea salt Add a pinch according to taste.
  • to taste cracked black pepper for garnish Optional garnish.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Brush the flatbread with olive oil and place it on a baking sheet.
  • Arrange the brie slices evenly over the flatbread, then scatter the fresh blueberries on top.
  • Sprinkle with thyme and a light pinch of sea salt.

Cooking

  • Bake for 8-10 minutes, or until the brie melts and the blueberries start to burst.
  • Drizzle with honey and add cracked black pepper if desired.
  • Slice and serve warm.

Notes

For a delightful meal, serve alongside a fresh arugula salad dressed with balsamic vinaigrette or a warm bowl of butternut squash soup. You can store leftovers in an airtight container in the fridge for up to two days. To reheat, place it back in a preheated oven at 350°F (175°C) for about 5 minutes until warmed through. For longer storage, freeze before baking and bake from frozen, adding a few extra minutes to the cooking time.
