  • 2 ripe bananas Use very ripe bananas for the best flavor.
  • 1 cup blueberries Fresh or frozen; do not thaw frozen blueberries to prevent color bleeding.
  • 1/2 cup sugar
  • 1/4 cup butter Melted.
  • 1/2 cup yogurt or sour cream For added moisture.
  • 2 eggs Can be substituted with flax eggs or applesauce for a vegan option.
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour Can substitute half with whole wheat flour for a healthier twist.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • In a bowl, mash the ripe bananas. Mix in the sugar, melted butter, yogurt, eggs, and vanilla until well combined.
  • In another bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Fold in the blueberries gently.
  • Pour the batter into the prepared loaf pan.

Baking

  • Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Serve warm or at room temperature. Spreading butter, cream cheese, or honey enhances the flavor. Store in an airtight container for up to three days or freeze for three months.
