  • 1/2 cup rum
  • 1/4 cup brown sugar can swap for maple syrup
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • Salt and pepper to taste

Preparation
  1. Preheat your oven to 375°F.
  2. In a saucepan, mix together the blackberries, rum, brown sugar, minced garlic, and dried thyme.
  3. Cook over medium heat, stirring occasionally, until the blackberries break down, and the mixture thickens (about 10 minutes).
  4. Season the pork loin adequately with salt and pepper.
  5. Place the seasoned pork loin in a roasting pan.
  6. Generously brush the blackberry rum glaze over the pork, ensuring it’s coated evenly.
Cooking
  1. Roast the pork loin for 45-60 minutes or until the internal temperature reaches 145°F, basting with the glaze every 15 minutes.
  2. When done, let the pork loin rest for 10 minutes before slicing and serving.
