- Season the pork loin adequately with salt and pepper.
- Place the seasoned pork loin in a roasting pan.
- Generously brush the blackberry rum glaze over the pork, ensuring it’s coated evenly.
Cooking
- Roast the pork loin for 45-60 minutes or until the internal temperature reaches 145°F, basting with the glaze every 15 minutes.
- When done, let the pork loin rest for 10 minutes before slicing and serving.
