  • 2 cups fresh blackberries Use fresh blackberries for the best flavor, thaw and drain if using frozen

Batter

  • 1 cup all-purpose flour
  • 1 cup sugar Adjust to taste for a sweeter cobbler
  • 1 cup milk
  • 1/2 cup unsalted butter (brown butter) Brown the butter for a nutty flavor
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a pan, melt the butter over medium heat until it turns brown and gives a nutty aroma. Set aside.
  • In a mixing bowl, combine the flour, sugar, baking powder, and salt.
  • Stir in the milk and vanilla extract until smooth.
  • Pour the batter into a greased baking dish.
  • Gently arrange the blackberries on top of the batter.
  • Drizzle the browned butter over the top.

Baking

  • Bake for 45-50 minutes or until golden brown and a toothpick comes out clean.

Notes

To store, let cool, cover tightly, and refrigerate for 3-4 days; freeze for up to 2 months. Reheat at 350°F until warmed through.
