Main Ingredients

  • 1/2 cup unsalted butter, softened Make sure it's softened for easy mixing.
  • 1/2 cup Biscoff spread Can use crunchy for added texture.
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips Feel free to mix in different types of chocolate.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • In a large bowl, cream together the softened butter, Biscoff spread, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Gently fold in the chocolate chips until evenly distributed throughout the cookie dough.
  • Scoop out tablespoon-sized portions of dough and roll them into balls.
  • Place them on the prepared baking sheet, spacing them about 2 inches apart.

Baking

  • Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.

Notes

These cookies are best served warm with a glass of milk or a cup of coffee. For a special touch, try melting some extra Biscoff spread and drizzling it on top of each cookie. Store in an airtight container for up to a week, or freeze with parchment paper between layers.
