  • 2 cups cooked rice Use cold, day-old rice for best texture.
  • 2 tablespoons vegetable oil
  • 1 cup mixed vegetables (carrots, peas, corn) Can use any leftover vegetables.
  • 2 eggs eggs For added protein, you can substitute with cooked chicken, shrimp, or tofu.
  • 3 tablespoons soy sauce
  • 2 pieces green onions, chopped Adds freshness to the dish.
  • Salt and pepper to taste

Preparation

  • Heat the vegetable oil in a large pan or wok over medium-high heat.
  • Add the mixed vegetables and stir-fry for about 2 minutes.
  • Push the vegetables to one side of the pan and crack the eggs on the other side. Scramble until fully cooked.
  • Add the cooked rice to the pan, mixing everything together.
  • Pour in the soy sauce and stir well to combine.
  • Season with salt and pepper, then stir in the chopped green onions.
  • Cook for another 2-3 minutes until heated through. Serve hot.

Notes

Best Fried Rice pairs well with crispy egg rolls or a fresh side salad. For longer storage, keep leftovers in an airtight container in the refrigerator for up to three days or freeze for up to three months. Reheat gently with a splash of soy sauce or water.
