Preparation

  • Cut beef chuck into 1-inch pieces and season generously with salt and pepper.
  • Sear the beef in a heavy-bottomed pot over medium-high heat until browned on all sides.
  • Remove the beef and set aside. In the same pot, sauté diced onions until translucent.
  • Add minced garlic for the last minute to avoid burning.

Cooking

  • Stir in carrots, potatoes, and tomato paste, cooking together for a few minutes.
  • Pour in red wine, scraping the browned bits from the bottom of the pot.
  • Return the beef to the pot, pour in the beef broth, and add the herbs.
  • Bring to a gentle simmer, cover the pot, and cook on low heat for 1.5 to 2 hours or until beef is fork-tender.
  • Before serving, taste and adjust seasoning with salt, pepper, and fresh herbs.

Notes

Letting the stew sit before serving enhances its flavors. Serve with crusty bread or a light salad for a complete meal.
