Preparation

  • Preheat your oven to 400°F (200°C). A hot oven is key for ensuring those crispy edges.
  • Rinse the Brussels sprouts under cold water and trim off the stem ends. Cut them in half lengthwise for optimal roasting.

Cooking

  • In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper until they are evenly coated. If adding garlic, mix it in at this step.
  • Spread the Brussels sprouts on a baking sheet in a single layer, ensuring they aren’t crowded.
  • Roast in the oven for about 20-25 minutes, flipping halfway through, until they are golden brown and crispy. For added flavor, drizzle with balsamic glaze in the last 5 minutes of cooking.
  • Once out of the oven, sprinkle with grated Parmesan, lemon zest, and fresh herbs. Serve immediately while still warm and crisp.

Notes

Store fresh Brussels sprouts in a plastic bag in the fridge for up to a week, unwashed until ready to cook. Enjoy with roasted chicken, beef, or as part of a grain bowl.
