  • 4 pieces ripe bananas (about 1 ½ cups mashed) Use very ripe bananas for best flavor and moisture.
  • 1 cup all-purpose flour
  • ¾ cup granulated sugar
  • 1 tsp baking soda
  • ¼ tsp salt
  • 2 large eggs Can substitute with applesauce or flaxseed meal mixed with water.
  • ½ cup unsalted butter (melted)
  • 1 tsp vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • In a mixing bowl, mash the ripe bananas until they are smooth but still chunky.
  • Mix in the melted butter, then beat in the eggs one at a time. Stir in the vanilla extract.
  • In another bowl, whisk together the flour, sugar, baking soda, and salt.
  • Gradually fold the dry mixture into the wet ingredients until just combined.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
  • Cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Banana bread can be served warm or at room temperature. You can enjoy it plain or with butter. For storage, wrap tightly in plastic wrap or foil and keep at room temperature for up to 3 days or freeze for up to 3 months. Experiment with adding nuts or chocolate chips.
